Ingredients

Scale
  • 8 oz flank steak or sirloin, thinly sliced against the grain
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 tsp smoked paprika
  • 1 cup cooked black beans, rinsed and drained
  • 1 cup cooked corn kernels (fresh or frozen)
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded sharp cheddar cheese (or dairy-free cheese)
  • ½ cup chopped green onions
  • 1 cup shredded romaine lettuce or mixed greens
  • 3 tbsp Dijon mustard
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar
  • 2 tbsp mayonnaise or Greek yogurt
  • Salt and pepper, to taste

Instructions

  1. Pat the steak slices dry with paper towels.
  2. Season steak with salt, pepper, and smoked paprika evenly on both sides.
  3. Heat olive oil in a skillet over medium-high heat until shimmering (about 2 minutes).
  4. Lay steak strips in a single layer without crowding the pan.
  5. Cook steak strips for 2-3 minutes per side for medium-rare, adjusting time for desired doneness.
  6. Transfer steak to a plate and let rest for 5 minutes.
  7. In a small bowl, whisk together Dijon mustard, honey, apple cider vinegar, and mayonnaise or Greek yogurt.
  8. Season honey mustard sauce with salt and pepper to taste and set aside.
  9. Rinse and drain black beans and corn.
  10. Dice avocado and halve cherry tomatoes.
  11. Chop green onions and shred lettuce.
  12. Measure out shredded cheddar cheese.
  13. Start with a base layer of shredded lettuce in a serving bowl.
  14. Layer black beans evenly over lettuce, followed by corn.
  15. Scatter diced avocado, then halved cherry tomatoes.
  16. Add shredded cheddar cheese and green onions.
  17. Top with warm steak strips.
  18. Drizzle honey mustard sauce generously over the top or serve on the side.
  19. Optional: Garnish with chopped fresh cilantro or parsley.
  20. Serve immediately for best texture contrast.

Notes

Slice steak against the grain for tenderness. Pat steak dry before searing to get a good crust. Do not overcrowd the pan; cook steak in batches if needed. Rest steak after cooking to keep juices locked in. Assemble bowl just before serving to avoid sogginess, especially with avocado and lettuce. Honey mustard sauce can be made ahead and refrigerated. For variations, swap steak with grilled chicken, shrimp, tofu, or portobello mushrooms. Use seasonal veggies or add spicy elements like jalapeños or chipotle sauce.
