  • 1 pound flank or skirt steak, thinly sliced
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • 8 cups sturdy, thick-cut tortilla chips
  • 2 cups shredded sharp cheddar cheese (or blend of cheddar and Monterey Jack)
  • 1 cup canned black beans, rinsed and drained
  • 1 medium tomato, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, thinly sliced (optional)
  • 1/4 cup fresh cilantro leaves, chopped
  • 1 ripe avocado, mashed with a squeeze of lime and pinch of salt
  • 1/2 cup sour cream
  • 1/2 cup medium-spicy salsa
  • 1 tablespoon olive oil

Instructions

  1. In a small bowl, mix smoked paprika, chili powder, garlic powder, cumin, salt, and pepper. Pat steak dry and rub seasoning evenly over both sides.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Cook steak 3-4 minutes per side for medium-rare. Remove and let rest 5 minutes, then slice thinly against the grain.
  3. Preheat oven to 375°F (190°C). Spread half the tortilla chips on a large baking sheet. Sprinkle half the black beans, then half the steak and 1 cup cheese. Repeat layers with remaining chips, beans, steak, and cheese.
  4. Bake for 7-10 minutes until cheese is melted and bubbly. Watch to prevent burning.
  5. Remove from oven and immediately top with diced tomatoes, red onions, jalapeños, and cilantro. Dollop guacamole and sour cream, then drizzle salsa. Serve immediately.

Notes

Let steak rest after cooking for juiciness. Layer cheese beneath and on top to keep chips crispy. Add fresh toppings after baking to avoid sogginess. For reheating leftovers, warm in oven at 350°F for 8 minutes to maintain crispness. Avoid microwaving.
