This sweet potato hummus flatbread pizza combines creamy hummus, fresh veggies, and crispy flatbread for a healthy, vibrant, and customizable dish perfect for parties or family dinners.

  • 1 large sweet potato, peeled and cubed
  • 1 cup canned chickpeas, drained and rinsed
  • 2 tbsp tahini
  • 2 tbsp olive oil
  • 1 clove garlic
  • 1 tbsp lemon juice
  • 1/2 tsp paprika (optional, for a smoky flavor)
  • Salt and pepper, to taste
  • 4 small flatbreads (store-bought or homemade)
  • 1 cup shredded mozzarella cheese (or dairy-free cheese)
  • 1/2 cup crumbled feta cheese (optional)
  • 1 cup fresh baby spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup sliced red onion
  • 1/4 cup Kalamata olives, pitted and halved
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat your oven to 400Β°F (200Β°C). Peel and cube the sweet potato, then toss it with 1 tablespoon of olive oil, a pinch of salt, and pepper. Spread the cubes on a baking sheet and roast for 20 minutes, or until soft and slightly caramelized.
  2. Once the sweet potato has cooled slightly, add it to a food processor along with the chickpeas, tahini, garlic, 1 tablespoon of olive oil, lemon juice, and paprika (if using). Blend until smooth, scraping down the sides as needed. Taste and adjust seasoning with more salt, pepper, or lemon juice.
  3. Set your oven to 425Β°F (220Β°C) and place a baking sheet or pizza stone inside to heat.
  4. Lay your flatbreads on a clean surface. Spread a generous layer of sweet potato hummus over each, leaving a small border around the edges.
  5. Sprinkle shredded mozzarella cheese evenly over the hummus. Arrange baby spinach leaves, cherry tomatoes, red onion slices, and Kalamata olives on top. Finish with crumbled feta cheese, if desired.
  6. Carefully transfer the assembled flatbreads to the preheated baking sheet or pizza stone. Bake for approximately 10-12 minutes, or until the edges are golden and the cheese is melted.
  7. Remove the pizzas from the oven and garnish with fresh basil leaves. Slice and serve warm!
