Ingredients

Scale
  • 3 ¾ cups (480g) all-purpose flour
  • 1 ½ teaspoons salt
  • 1 packet (2 ¼ teaspoons) instant yeast
  • 1 ½ cups (360ml) warm water (about 100°F)
  • ¼ cup (60ml) olive oil (plus extra for greasing)
  • 2 cups (300g) seedless red or black grapes
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves
  • ½ teaspoon flaky sea salt
  • Freshly cracked black pepper (optional)
  • A drizzle of honey for serving (optional)

Instructions

  1. Prepare the dough: In a large mixing bowl, combine the flour, salt, and instant yeast. Stir to mix. Add the warm water and olive oil, then mix until a shaggy dough forms.
  2. Knead the dough: Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes, or until it’s smooth and elastic. If it feels sticky, sprinkle with a little extra flour as you go.
  3. Let it rise: Grease the mixing bowl with olive oil, place the dough inside, and cover with plastic wrap or a clean kitchen towel. Let it rise in a warm, draft-free spot for 1-2 hours, or until it doubles in size.
  4. Prepare the grapes: While the dough rises, toss the grapes with 1 tablespoon of olive oil and set aside.
  5. Shape the dough: Once the dough has risen, lightly grease your baking sheet with olive oil. Turn the dough out onto the pan and gently stretch and press it into an even layer.
  6. Add the toppings: Press the grapes into the dough, spacing them out evenly. Sprinkle fresh thyme leaves and flaky sea salt over the top, then drizzle with the remaining olive oil.
  7. Final rise: Cover the pan loosely with plastic wrap or a towel, and let the dough rise again for 30 minutes.
  8. Bake: Preheat your oven to 425°F (220°C). Bake the focaccia for 20-25 minutes, or until the edges are golden brown and the grapes have softened and caramelized.
  9. Cool and serve: Let the focaccia cool slightly before slicing. Serve warm or at room temperature, with an optional drizzle of honey for extra sweetness.

Notes

[‘Use high-quality olive oil for the best flavor.’, ‘Make sure your grapes are ripe and juicy for maximum sweetness.’, ‘If the dough feels sticky while kneading, resist the urge to over-flour it for a softer texture.’, ‘If the edges brown too quickly while baking, cover them with foil to prevent burning.’, ‘The flavors of the roasted grapes and thyme deepen over time, making the focaccia even tastier the next day.’]
