  • ½ cup whole milk
  • 5 large egg yolks
  • ⅓ cup granulated sugar
  • ½ cup pure pumpkin puree
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground ginger
  • Brown sugar for topping

Instructions

  1. Preheat your oven to 325°F (160°C). Prepare a large baking dish for a water bath by placing a kitchen towel at the bottom.
  2. In a medium saucepan, heat 1 ½ cups of heavy cream and ½ cup of whole milk until warm but not boiling. Remove from heat.
  3. In a mixing bowl, whisk 5 large egg yolks with ⅓ cup granulated sugar until pale and creamy.
  4. Stir in ½ cup pure pumpkin puree, 1 tsp vanilla extract, ½ tsp ground cinnamon, ¼ tsp ground nutmeg, and ¼ tsp ground ginger.
  5. Gradually pour the warm cream mixture into the egg mixture, whisking constantly to avoid curdling.
  6. Strain the custard through a fine mesh sieve for an ultra-smooth texture (optional).
  7. Pour the custard evenly into 6 ramekins.
  8. Place the ramekins in the baking dish and fill the dish with hot water until it reaches halfway up the ramekins.
  9. Bake for 35-40 minutes until the edges are set but the centers still jiggle slightly. Remove from oven and cool completely.
  10. Refrigerate the ramekins for at least 4 hours or overnight.
  11. Sprinkle a thin, even layer of brown sugar on top of each chilled custard.
  12. Use a kitchen torch to melt and caramelize the sugar until golden and crisp. Alternatively, broil the ramekins for 2-3 minutes, watching closely to avoid burning.
