  • 3/4 cup roasted and unsalted pumpkin seeds
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons finely chopped fresh parsley
  • 1 clove garlic, minced or grated
  • 1 teaspoon lemon zest
  • Olive oil for brushing and drizzling
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 375Β°F (190Β°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine 3/4 cup of roasted pumpkin seeds, 2 tablespoons of grated Parmesan cheese, 2 tablespoons of chopped parsley, 1 clove of minced garlic, and 1 teaspoon of lemon zest. Pulse until the mixture is coarse and resembles breadcrumbs.
  3. Pat the salmon fillets dry with a paper towel. Sprinkle both sides with a pinch of salt and pepper.
  4. Brush the top side of each fillet with olive oil, then press the pumpkin seed mixture firmly onto the top of each piece, ensuring the crust adheres well.
  5. Place the salmon fillets on the prepared baking sheet, crust-side up. Bake for 12-15 minutes, depending on the thickness of your fillets. The salmon should flake easily with a fork when done.
  6. Let the salmon rest for a minute or two before serving to allow the juices to redistribute.
