A juicy, tender ham coated in a sweet and smoky cranberry-chipotle glaze, perfect for holiday feasts and family gatherings.

Ingredients

Scale
  • 79 pounds bone-in ham, spiral-sliced
  • 1 cup cranberry sauce (whole berry variety)
  • 23 chipotle peppers in adobo sauce
  • 1 tablespoon adobo sauce
  • 1/2 cup brown sugar
  • 1/4 cup orange juice
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Optional: pinch of cinnamon or nutmeg

Instructions

  1. Preheat the oven to 325°F (163°C) and position the rack in the lower third.
  2. Remove the ham from its packaging and place it in a roasting pan, cut side down. Cover tightly with aluminum foil.
  3. In a small saucepan, combine cranberry sauce, chopped chipotle peppers, adobo sauce, brown sugar, orange juice, honey, Dijon mustard, garlic powder, and smoked paprika. Stir over medium heat until the mixture is smooth and heated through, about 5-7 minutes. Taste and adjust sweetness or spiciness as needed.
  4. Place the covered ham in the preheated oven and bake for about 1.5 hours (15 minutes per pound).
  5. Remove the ham from the oven and uncover. Brush generously with the cranberry-chipotle glaze, making sure to coat all sides evenly.
  6. Increase the oven temperature to 400°F (204°C) and return the ham to the oven, uncovered. Bake for an additional 15-20 minutes, basting every 5 minutes with more glaze for extra flavor and shine.
  7. Remove the ham from the oven and let it rest for 10-15 minutes before slicing.

Notes

[‘Prepare the glaze ahead of time and store it in the fridge for up to three days.’, ‘Monitor the ham during the caramelization step to avoid burning the glaze.’, ‘Use a meat thermometer to ensure the ham reaches an internal temperature of 140°F (60°C).’]
