These Almond Cherry Pie Bars feature a buttery crust, tart cherry filling, and a sweet almond crumble topping, making them a perfect dessert for parties, picnics, and gatherings.

Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 teaspoon almond extract
  • 2 cups (240g) all-purpose flour
  • 1/2 teaspoon salt
  • 4 cups (600g) fresh or frozen cherries, pitted
  • 3/4 cup (150g) granulated sugar
  • 2 tablespoons (15g) cornstarch
  • 1 tablespoon lemon juice
  • 1/4 teaspoon almond extract
  • Sliced almonds for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×13-inch baking pan or line it with parchment paper.
  2. Cream the softened butter and sugar together in a mixing bowl until light and fluffy (about 2-3 minutes). Add the almond extract and mix until combined. Gradually add the flour and salt, mixing until a crumbly dough forms.
  3. Reserve about 1/3 of the dough for the crumble topping. Press the remaining dough evenly into the prepared baking pan to form the crust. Bake for 15 minutes or until lightly golden. Remove from the oven and let it cool slightly.
  4. In a small saucepan, combine the cherries, sugar, cornstarch, lemon juice, and almond extract. Cook over medium heat, stirring occasionally, until the mixture thickens and bubbles (about 5-7 minutes). Remove from heat and let it cool slightly.
  5. Spread the cherry filling evenly over the baked crust. Crumble the reserved dough on top, creating a rustic, uneven topping. If desired, sprinkle sliced almonds over the crumble.
  6. Return the pan to the oven and bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly. Let the bars cool completely on a wire rack before slicing.
  7. Once cooled, cut into squares or rectangles and serve. Enjoy!
