homemade meatloaf recipe - featured image

This homemade meatloaf is moist, tender, and bursting with flavor, topped with a tangy-sweet glaze that’s perfectly balanced. It’s the ultimate comfort food for any occasion.

Ingredients

Scale
  • 1 pound (450g) ground beef (80/20)
  • 1/2 cup (60g) breadcrumbs
  • 1/4 cup (60ml) milk
  • 2 large eggs, beaten
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup (60ml) ketchup
  • 2 tablespoons (30g) brown sugar
  • 1 teaspoon mustard (yellow or Dijon)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easier cleanup.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, milk, beaten eggs, onion, garlic, Worcestershire sauce, and ketchup. Mix gently until fully combined, but don’t overwork the mixture.
  3. Transfer the mixture to the prepared loaf pan, pressing it down gently to form an even shape.
  4. In a small bowl, whisk together ketchup, brown sugar, and mustard. Spread half of the glaze evenly over the top of the meatloaf.
  5. Bake uncovered for 45 minutes. Remove from the oven, spread the remaining glaze over the top, and return to bake for an additional 15 minutes. The meatloaf is done when it reaches an internal temperature of 160°F (71°C).
  6. Let the meatloaf rest for 5-10 minutes before slicing. Serve warm and enjoy!

Notes

For a juicier meatloaf, use 80/20 ground beef and avoid overmixing the meat mixture. Resting the meatloaf after baking helps lock in the juices. Customize the glaze with cayenne or balsamic vinegar for a twist.
