These fudgy, bite-sized brownie treats combine rich chocolate with a refreshing mint kick, perfect for St. Patrick’s Day or any festive occasion. They are quick to make, easy to customize, and loved by kids and adults alike.

  • 1 cup (200 g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 1/3 cup (35 g) unsweetened cocoa powder
  • 3/4 cup (95 g) all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp espresso powder (optional)
  • 3/4 cup (130 g) mint chocolate chips
  • A few drops green food coloring (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare your mini muffin pan by spraying lightly with non-stick spray or lining with mini silicone baking cups.
  2. In a large mixing bowl, whisk together the melted unsalted butter and granulated sugar until smooth and glossy, about 2 minutes. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, sift together the unsweetened cocoa powder, all-purpose flour, salt, and espresso powder (if using).
  4. Gradually fold the dry ingredients into the wet ingredients with a spatula just until combined. Do not overmix; a few streaks of flour are okay.
  5. Fold in most of the mint chocolate chips, reserving a small handful for topping. If desired, add a few drops of green food coloring and gently swirl it in.
  6. Spoon the batter evenly into the prepared mini muffin pan, filling each cup about three-quarters full. Sprinkle the reserved mint chips on top.
  7. Bake for 12-15 minutes, checking after 12 minutes. The brownies should be set around the edges but slightly soft in the center. A toothpick inserted should come out with a few moist crumbs but no raw batter.
  8. Let the brownie bites cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

If mint chips melt too much, chill the batter for 10 minutes before baking to keep chips defined. Use non-stick spray or silicone liners to prevent sticking. Let brownies cool completely before removing from pan. For gluten-free, substitute flour with gluten-free blend. For dairy-free, replace butter with coconut oil and use dairy-free mint chips.
