Fresh Watermelon Mint Agua Fresca

A simple, refreshing, and hydrating drink made with fresh watermelon, mint, lime juice, and water. Perfect for summer and quick to prepare.

  • 6 cups fresh watermelon, cubed and seeds removed
  • 1/4 cup fresh mint leaves, washed and bruised
  • 3 cups cold water (filtered or spring water preferred)
  • 2 tablespoons fresh lime juice
  • 12 tablespoons granulated sugar or honey (optional)

Instructions

  1. Cut about 6 cups (900g) of watermelon into cubes, removing any seeds. Discard the rind.
  2. Place the watermelon cubes in a blender and pulse until smooth, about 30 seconds to 1 minute.
  3. Pour the blended watermelon through a fine mesh strainer or cheesecloth into a bowl or pitcher, pressing down to extract juice (optional).
  4. Add about 1/4 cup fresh mint leaves to the pitcher and gently muddle with a muddler or back of a spoon to release oils and aroma.
  5. Add the strained watermelon juice to the pitcher with the mint. Pour in 3 cups cold water and 2 tablespoons fresh lime juice. Stir well to combine.
  6. If desired, add 1-2 tablespoons granulated sugar or honey to sweeten. Stir until dissolved.
  7. Refrigerate the agua fresca for at least 30 minutes to let flavors meld. Serve chilled over ice, garnished with mint sprigs or lime wedges.

Notes

If short on time, serve immediately over ice but chilling enhances the mint flavor. Adjust sweetness based on watermelon ripeness. For a sparkling version, replace 1 cup of water with club soda before serving. Avoid over-blending mint to prevent bitterness. Store leftovers in a sealed container in the refrigerator for up to 2 days and stir before serving.
