Fresh Watermelon Feta Mint Skewers

A quick and easy summer appetizer combining sweet watermelon, salty feta, and fresh mint on skewers, perfect for cookouts and gatherings.

Ingredients

  • Seedless watermelon, cut into 1-inch cubes
  • Block feta cheese, cut into 1-inch cubes
  • Fresh mint leaves, whole and washed
  • 1 tablespoon extra virgin olive oil
  • Juice of half a lime
  • Flaky sea salt or sea salt, to taste
  • Optional: freshly ground black pepper

Instructions

  1. Cut seedless watermelon into 1-inch cubes. Pat dry with paper towels if too wet.
  2. Cut block feta cheese into roughly 1-inch cubes, keeping chunks distinct.
  3. Wash and dry fresh mint leaves, removing thick stems.
  4. Thread one watermelon cube, one mint leaf, and one feta cube onto each skewer. Repeat for longer skewers if desired.
  5. In a small bowl, whisk together extra virgin olive oil, lime juice, flaky sea salt, and black pepper if using.
  6. Arrange skewers on a serving platter, drizzle with the olive oil-lime dressing, and sprinkle extra flaky salt on top. Serve immediately.

Notes

Assemble skewers just before serving to avoid sogginess. Pat watermelon dry if too wet. Soak wooden skewers in water for 15 minutes if grilling. Optional grilling of watermelon cubes for 1 minute per side adds smoky flavor. For dairy-free, substitute feta with marinated firm tofu or plant-based cheese.
