  • 1 cup fresh strawberries, hulled and sliced
  • ½ cup granola (lightly sweetened, oat-based recommended)
  • ¼ cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey or maple syrup (optional)
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon lemon juice

Instructions

  1. In a mixing bowl, toss 1 cup of hulled and sliced strawberries with 1 teaspoon of fresh lemon juice. Set aside to macerate for about 5 minutes.
  2. Place 3 cups of frozen banana slices into a high-speed blender or food processor. Add ¼ cup almond milk, 1 teaspoon vanilla extract, and 1 tablespoon honey or maple syrup if using.
  3. Blend on high until smooth and creamy, scraping down the sides as needed, about 2–3 minutes.
  4. Check the texture; if too thick, add a splash more almond milk. If too thin, add more frozen banana slices and blend again until creamy like soft-serve ice cream.
  5. Spoon the nice cream into serving bowls. Top with the macerated strawberries and ½ cup granola. Optionally, sprinkle with 1 tablespoon chia seeds.
  6. Serve immediately for best texture and freshness. Store leftovers in a freezer-safe container for up to 2 days, keeping granola separate to maintain crunch.

Notes

Let bananas thaw for 5 minutes if blender struggles. Pulse and scrape often to avoid overheating. Add granola just before serving to keep it crunchy. Vanilla extract enhances flavor. Nut butter can be added for richness. Store granola and fruit separately if prepping ahead.
