  • 1 cup (240 ml) small-curd cottage cheese (full-fat or low-fat)
  • ½ cup (75 g) fresh pomegranate seeds
  • 1 tablespoon (15 ml) honey (raw or wildflower)
  • 2 tablespoons (15 g) chopped toasted almonds or walnuts (optional but recommended)
  • A few fresh mint leaves, finely chopped (about 1 tablespoon)
  • ½ teaspoon lemon zest
  • A pinch of ground cinnamon (optional)
  • ¼ teaspoon vanilla extract

Instructions

  1. Carefully remove the seeds from one fresh pomegranate, scoring the skin and breaking it apart over a bowl. Set aside ½ cup (75 g) of seeds.
  2. Toast 2 tablespoons (15 g) of chopped almonds or walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant and lightly browned. Stir frequently and let cool.
  3. In a medium bowl, combine 1 cup (240 ml) small-curd cottage cheese with 1 tablespoon (15 ml) honey, ¼ teaspoon vanilla extract, ½ teaspoon lemon zest, and a pinch of cinnamon if using. Stir gently to blend flavors.
  4. Finely chop a few mint leaves (about 1 tablespoon) and fold them into the cottage cheese mixture.
  5. Spoon the cottage cheese base into a serving bowl and sprinkle the toasted nuts evenly over the top.
  6. Generously scatter the pomegranate seeds on top.
  7. Drizzle a little extra honey or add more mint leaves for garnish if desired. Serve immediately.

Use small-curd cottage cheese for creamier texture. Toast nuts evenly over medium heat to avoid burning. Add pomegranate seeds just before serving to keep crunch.
