Fresh Lavender Honey Lemonade

A refreshing summer drink combining the floral notes of culinary lavender with the sweetness of honey and the tang of fresh lemons, enhanced with fresh herb sprigs for an aromatic twist.

Ingredients

  • 6 large fresh lemons (about 1 cup or 240 ml fresh lemon juice)
  • 1/2 cup (120 ml) honey (preferably mild, floral variety like clover or orange blossom)
  • 2 tablespoons dried culinary lavender
  • 4 cups (960 ml) water, divided (hot water for steeping and cold water for diluting)
  • 6 to 8 fresh herb sprigs (thyme, mint, or rosemary)
  • Ice cubes for serving

Instructions

  1. Bring 1 cup (240 ml) of water to a simmer in a medium saucepan. Remove from heat, add 2 tablespoons of dried culinary lavender, and steep for 10 minutes.
  2. Strain out the lavender buds, return the infused water to the pan, add 1/2 cup (120 ml) honey, and warm gently over low heat, stirring until fully dissolved. Set aside to cool. Do not boil honey.
  3. Juice 6 large lemons to yield about 1 cup (240 ml) fresh lemon juice, removing any seeds.
  4. In a large pitcher, combine the cooled lavender honey syrup, lemon juice, and 3 cups (720 ml) cold water. Stir well and adjust sweetness or dilution as desired.
  5. Gently bruise 6 to 8 fresh herb sprigs by clapping them between your hands or lightly crushing with a spoon. Add to the pitcher and let steep in the fridge for 10 minutes.
  6. Serve chilled over ice cubes, garnished with additional herb sprigs or lemon slices.
