Fresh Honey Glazed Carrots with Thyme

A quick and easy side dish featuring fresh carrots glazed with honey and fresh thyme, delivering a comforting yet elegant flavor perfect for any occasion.

  • 1 pound (450 g) fresh carrots, peeled and cut into uniform sticks or rounds
  • 2 tablespoons (30 ml) raw honey
  • 1 tablespoon (about 34 sprigs) fresh thyme leaves, stripped
  • 1 tablespoon (14 g) unsalted butter, softened
  • 1 teaspoon (5 ml) olive oil
  • ½ teaspoon (3 g) salt, preferably sea salt or kosher salt
  • Pinch of freshly ground black pepper, to taste
  • 23 tablespoons (3045 ml) water, optional

Instructions

  1. Peel 1 pound (450 g) of fresh carrots and cut them into uniform sticks about 2 inches (5 cm) long and ¼ inch (0.6 cm) thick.
  2. Place a large skillet over medium heat and add 1 teaspoon (5 ml) olive oil and 1 tablespoon (14 g) unsalted butter. Let the butter melt completely without browning.
  3. Toss the prepared carrots into the pan. Stir gently to coat with the butter and oil mixture. Spread them out in a single layer as much as possible for even cooking.
  4. Sauté the carrots for about 5 minutes, stirring occasionally, until they start to soften but still have a slight bite.
  5. Drizzle 2 tablespoons (30 ml) of raw honey evenly over the carrots and sprinkle 1 tablespoon of fresh thyme leaves. Stir gently to combine.
  6. Continue to cook for another 3-4 minutes, stirring occasionally, until the honey thickens into a shiny glaze. Add 2-3 tablespoons (30-45 ml) of water if the glaze thickens too much.
  7. Sprinkle ½ teaspoon (3 g) salt and a pinch of freshly ground black pepper. Stir well to distribute the seasoning and adjust to taste.
  8. Once the carrots are tender and beautifully glazed, remove from heat. Transfer to a serving dish and garnish with extra fresh thyme sprigs.

Notes

Use fresh thyme for best flavor; if using dried thyme, reduce to 1 teaspoon. To prevent honey from burning, cook on medium or medium-low heat and add water if glaze thickens too much. For a dairy-free version, substitute butter with coconut oil or extra olive oil. Peeling carrots thinly helps glaze stick better and cooks them faster.
