  • 1/2 medium cucumber, thinly sliced (optional)
  • 1 tablespoon fresh ginger, finely grated
  • 3 large scallions, thinly sliced (white and green parts)
  • 2 tablespoons rice vinegar
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon honey or maple syrup
  • 1 tablespoon gluten-free tamari or soy sauce
  • Freshly ground black pepper, to taste
  • Sea salt, to taste

Instructions

  1. Prepare the dressing: In a small bowl, combine grated ginger, sliced scallions, rice vinegar, olive oil, honey or maple syrup, and gluten-free tamari. Whisk until emulsified and smooth. Season with salt and black pepper to taste. Takes about 5 minutes.
  2. Prep the salad ingredients: Rinse and dry mixed greens thoroughly. Hull and slice strawberries. Thinly slice cucumber if using. Toast pecans or walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant, stirring frequently. Let cool. Crumble goat cheese.
  3. Assemble the salad: In a large salad bowl, add greens, strawberries, cucumber, and toasted nuts. Drizzle about half the ginger scallion sauce over the salad and toss gently to combine without bruising the greens. Add crumbled goat cheese on top without tossing.
  4. Serve and garnish: Transfer salad to serving plates or platter. Drizzle remaining dressing over salad and garnish with extra strawberry halves or scallion slices if desired. Serve immediately.
