Ingredients

Scale
  • 2 cups (480 ml) Greek yogurt (full-fat or low-fat)
  • 2 tablespoons (30 ml) honey or maple syrup
  • 1 ½ cups (225 g) mixed fresh berries (raspberries, blueberries, sliced strawberries, blackberries)
  • 3 oz (85 g) dark chocolate (at least 70% cocoa)
  • 1 teaspoon (5 ml) vanilla extract (optional)
  • ¼ cup (30 g) chopped nuts or seeds (optional, toasted almonds, pistachios, or pumpkin seeds)

Instructions

  1. Mix the Yogurt Base: In a medium bowl, stir together 2 cups (480 ml) of Greek yogurt, 2 tablespoons (30 ml) of honey or maple syrup, and 1 teaspoon (5 ml) of vanilla extract until smooth and creamy (about 2 minutes).
  2. Prepare the Baking Sheet: Line a rimmed baking sheet (about 9×13 inches / 23×33 cm) with parchment paper or a silicone mat to prevent sticking.
  3. Spread the Yogurt: Pour the yogurt mixture onto the lined baking sheet and spread evenly to about ¼ inch (6 mm) thickness using a spoon or offset spatula (3-5 minutes).
  4. Add the Berries: Scatter 1 ½ cups (225 g) of fresh mixed berries evenly over the yogurt layer, pressing lightly so they stick without mashing.
  5. Freeze the Base: Place the baking sheet in the freezer for at least 2 hours or until the yogurt is firm and frozen solid.
  6. Melt the Chocolate: Melt 3 oz (85 g) of dark chocolate in a microwave-safe bowl in 20-second intervals, stirring between, or use a double boiler on low heat (about 5 minutes).
  7. Drizzle the Chocolate: Remove the frozen yogurt from the freezer and drizzle the melted dark chocolate over the bark in thin decorative lines using a spoon or piping bag.
  8. Optional Crunch: Sprinkle chopped nuts or seeds over the chocolate drizzle if desired.
  9. Final Freeze: Return the tray to the freezer for another 30 minutes to let the chocolate set completely.
  10. Break Into Bites: Lift the bark off the tray using the parchment paper and break into irregular pieces or cut with a sharp knife. Store in an airtight container in the freezer.

Notes

Pat berries dry before adding to yogurt to avoid sogginess. Use an offset spatula for even spreading. Melt chocolate slowly to avoid burning. Let bark sit at room temperature for 2-3 minutes before eating for easier biting. Store in airtight container with parchment paper to prevent sticking. Optional: add a teaspoon of cornstarch or gelatin powder to yogurt to prevent icy texture.
