  • 1 cup sweet corn (fresh, canned, or frozen)
  • 1 cup cherry tomatoes, quartered
  • 1/2 cup red onion, finely diced
  • 1 cup bell peppers, diced (any color)
  • 1/4 cup cilantro, chopped
  • 1 avocado, diced
  • 2 tablespoons lime juice, freshly squeezed
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the black beans, chop the tomatoes, dice the onion, and slice the bell peppers into bite-sized pieces.
  2. If using canned corn, drain it well. If using frozen, let it thaw completely. Fresh corn can be cut straight off the cob.
  3. Dice the avocado last to prevent browning and toss it with a little lime juice to keep it fresh.
  4. In a large mixing bowl, combine the black beans, corn, tomatoes, onion, and bell peppers.
  5. Chop the cilantro and add it to the bowl along with the diced avocado.
  6. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Taste and adjust seasoning as needed.
