This tangy and slightly sweet homemade apple cider vinaigrette transforms ordinary salads into memorable dishes. Quick, easy, and made with pantry staples, it’s a healthier alternative to store-bought dressings.

  • 1/2 cup extra virgin olive oil
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • Optional: Lemon juice, dried thyme, oregano, or parsley

Instructions

  1. Mince one garlic clove as finely as possible or use a garlic press for convenience. Set it aside.
  2. In a small bowl, whisk together 1/4 cup (60 ml) of apple cider vinegar and 1/2 cup (120 ml) of extra virgin olive oil until fully combined.
  3. Stir in 2 tablespoons (30 ml) of honey or maple syrup. Taste and adjust sweetness if needed.
  4. Mix in 1 tablespoon (15 ml) of Dijon mustard. This will add a slight creaminess and depth of flavor.
  5. Add the minced garlic, a pinch of salt, and freshly cracked black pepper to taste. Whisk everything together until smooth.
  6. Take a quick taste of the vinaigrette. Adjust the flavors by adding more vinegar for tanginess or more honey for sweetness.
  7. Transfer the vinaigrette to a jar with a lid for storage or pour directly over your salad. If saving for later, refrigerate and shake well before use.
