  • For the Creamy Glaze:
  • 1 cup powdered sugar (120g)
  • 2 tablespoons fresh orange juice (30ml)
  • 1 tablespoon heavy cream or milk (15ml)
  • Optional: Extra orange zest for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well. Zest and juice your oranges and set aside.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Add orange zest and mix until evenly distributed.
  3. In a medium bowl, whisk together eggs, orange juice, melted butter (cooled), buttermilk, and vanilla extract.
  4. Pour wet ingredients into dry ingredients. Stir gently with a spatula until just combined; do not overmix. Batter should be thick and a little lumpy.
  5. Divide batter evenly among muffin cups, filling each about 2/3 full.
  6. Bake for 18-22 minutes, until tops are golden and a toothpick inserted comes out clean or with a few moist crumbs.
  7. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  8. For the glaze: In a small bowl, whisk together powdered sugar, orange juice, and cream or milk until smooth and pourable. Adjust thickness as needed.
  9. Drizzle glaze over cooled muffins and sprinkle with extra orange zest if desired. Let glaze set for 10 minutes before serving.

Notes

For gluten-free, use a 1:1 GF flour blend. For dairy-free, substitute coconut oil for butter and almond milk plus lemon for buttermilk. Do not overmix the batter for best texture.
