  • 1/2 teaspoon chipotle chili powder
  • 1/2 cup sour cream or Greek yogurt (120g)
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon chipotle chili powder
  • 1 teaspoon honey or agave syrup (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your muffin tin thoroughly with butter or non-stick spray.
  2. In a large bowl, combine rolled oats, baking powder, ground cinnamon, salt, brown sugar, and chipotle chili powder. Stir well.
  3. In a separate bowl, whisk together eggs, milk, melted butter, maple syrup, vanilla extract, and fresh lime zest until fully combined.
  4. Pour the wet mixture into the dry ingredients and stir gently until fully combined. The batter will be thick and sticky.
  5. Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake for 25 to 30 minutes until edges are golden brown and a toothpick inserted comes out mostly clean with a few moist crumbs.
  7. While baking, whisk together sour cream or Greek yogurt, fresh lime juice, chipotle chili powder, honey (if using), and a pinch of salt to make the chipotle lime crema.
  8. Let the oatmeal cups cool in the pan for 10 minutes, then transfer to a cooling rack.
  9. Drizzle the chipotle lime crema generously over the oatmeal cups before serving.

Notes

Do not overmix the batter to keep the oatmeal cups tender and sticky. Use room temperature eggs and milk for even baking. Grease muffin tins well or use parchment liners to prevent sticking.
