  • 1/3 cup (75g) unsalted butter, melted
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (55g) brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 cup (90g) semi-sweet chocolate chips
  • 1/4 cup (60ml) pure maple syrup
  • 1 teaspoon Dijon mustard
  • 1 tablespoon unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Place your 10-inch skillet in the oven while it heats to get it nice and warm.
  2. In a large bowl, mash the bananas until smooth but still a little chunky—about 1 cup of mashed banana.
  3. Add the melted butter, granulated sugar, and brown sugar to the bananas. Stir until well combined and slightly glossy.
  4. Beat in the egg and vanilla extract until everything is smooth.
  5. Sprinkle baking soda and salt over the wet mixture. Stir gently to distribute evenly.
  6. Fold in the flour in two batches, mixing just until combined.
  7. Fold in the chocolate chips, saving a few to sprinkle on top.
  8. Carefully remove your hot skillet from the oven and spread the batter evenly inside.
  9. Bake for 30-35 minutes, or until a toothpick inserted near the center comes out mostly clean with just a few moist crumbs. Tent with foil if edges brown too fast.
  10. While the bread bakes, whisk together the maple syrup, Dijon mustard, and melted butter for the glaze.
  11. Remove the skillet from the oven and immediately drizzle the maple dijon glaze over the hot bread.
  12. Let the bread cool for at least 15 minutes before slicing.

Notes

Do not overmix the batter to keep the bread tender. Preheating the skillet creates crispy edges. Tent with foil if edges brown too quickly. Let bread rest before glazing for best glaze adherence. For a gooier center, bake closer to 30 minutes; for a more cake-like texture, bake full 35 minutes.
