  • 2 ripe avocados, mashed
  • 1 small lime, juiced
  • 2 tablespoons finely chopped cilantro
  • ½ small red onion, minced
  • 1 small jalapeño, seeded and minced (optional)
  • Salt to taste
  • 1 cup (100 g) shredded sharp cheddar cheese
  • 1 cup (100 g) shredded lettuce (iceberg or romaine)
  • 1 medium tomato, diced
  • ½ cup (70 g) sliced black olives (optional)
  • 1 cup (240 ml) chunky salsa

Instructions

  1. Prepare the Bean Layer: Mix refried beans with chipotle chili powder and cumin. Spread evenly in the bottom of the serving dish. (About 5 minutes) Tip: Warm beans slightly for easier spreading.
  2. Mix the Sour Cream Layer: Combine sour cream and taco seasoning. Stir well and spread over the bean layer, smoothing with a spatula. (5 minutes)
  3. Make the Fresh Guacamole: Mash avocados with lime juice until creamy but slightly chunky. Stir in cilantro, onion, jalapeño (if using), and salt. Adjust seasoning. Spread gently over sour cream layer. (10 minutes) Note: Avoid overmixing to keep texture.
  4. Add Salsa and Cheese Layers: Spread chunky salsa evenly over guacamole, then sprinkle shredded cheddar cheese on top. (5 minutes) Ensure salsa isn’t too watery.
  5. Finish with Fresh Veggies and Olives: Layer shredded lettuce, diced tomatoes, and black olives on top. (5 minutes)
  6. Chill Before Serving: Cover with plastic wrap and refrigerate at least 30 minutes to let flavors meld. Optional but recommended.
