  • 6 bone-in, skin-on chicken thighs (about 2 pounds / 900 g)
  • 3 tablespoons olive oil
  • 1 tablespoon brown sugar
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Prepare the Cajun spice mix by combining smoked paprika, cayenne pepper, garlic powder, onion powder, dried oregano, dried thyme, kosher salt, black pepper, and brown sugar in a small bowl.
  2. Place chicken thighs in a large mixing bowl or zip-top bag. Drizzle with olive oil and add the spice mix. Toss or massage until evenly coated. Add lemon juice if using. Seal and refrigerate overnight or at least 6 hours.
  3. Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top if available.
  4. Remove chicken from marinade and place skin-side up on the wire rack or baking sheet. Let sit at room temperature for 15 minutes.
  5. Bake for 35-40 minutes, or until internal temperature reaches 165°F (74°C) and skin is golden and crispy. Check at 30 minutes if oven runs hot.
  6. Let chicken rest for 5-10 minutes before serving to allow juices to redistribute.

Notes

Pat chicken skin dry before roasting if too wet to help crispiness. Do not overcrowd pan for even cooking. Use bone-in, skin-on thighs for best texture. Marinate overnight for best flavor and tenderness. Broil 2-3 minutes at end if skin isn’t crispy enough. Leftovers can be refrigerated up to 4 days or frozen up to 3 months.
