  • 2 tablespoons olive oil or avocado oil
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 4 scallions, thinly sliced (white and green parts separated)
  • 2 tablespoons fresh ginger, finely grated
  • 2 tablespoons soy sauce or tamari (gluten-free option)
  • 1 tablespoon rice vinegar
  • 1 teaspoon maple syrup or honey
  • 2 tablespoons neutral oil (grapeseed or light olive oil)
  • Freshly ground black pepper, to taste
  • Optional garnishes: fresh parsley or cilantro, chopped; lemon wedges

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels. Season evenly with salt, pepper, smoked paprika, cayenne pepper, and dried thyme. Set aside for 5 minutes.
  2. In a mixing bowl, combine the white parts of the scallions, grated ginger, soy sauce, rice vinegar, maple syrup, and neutral oil. Stir well and add black pepper to taste. Set aside.
  3. Heat olive oil in a skillet over medium-high heat until shimmering. Add minced garlic and sautΓ© for 30 seconds until fragrant.
  4. Add seasoned shrimp in a single layer and cook undisturbed for 2 minutes to develop a crust.
  5. Flip shrimp and cook for another 2 minutes until pink and opaque. Remove shrimp from pan and set aside on a warm plate.
  6. Pour the ginger scallion sauce into the warm skillet off the heat and stir gently. Add cooked shrimp back to the pan and toss to coat evenly.
  7. Transfer to a serving dish, garnish with green parts of scallions, fresh parsley or cilantro, and lemon wedges.
