Flavorful Caprese Chicken Recipe with Easy Sweet Balsamic Glaze

A simple yet delicious Caprese Chicken dish featuring juicy chicken breasts topped with fresh mozzarella, cherry tomatoes, basil, and a sweet balsamic glaze. Perfect for quick weeknight dinners or casual gatherings.

  • 4 boneless, skinless chicken breasts (about 6 ounces each)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 8 ounces fresh mozzarella, sliced
  • 1 cup cherry tomatoes, halved
  • A handful of fresh basil leaves, torn
  • 1/3 cup balsamic vinegar
  • 2 tablespoons honey
  • Optional: pinch of red pepper flakes

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and garlic powder. Let rest on the counter for about 10 minutes to come closer to room temperature.
  2. While the chicken rests, combine balsamic vinegar and honey in a small saucepan over medium heat. Stir occasionally and simmer gently for 8-10 minutes until thickened and reduced by half. Remove from heat and set aside.
  3. Heat olive oil in a large skillet over medium-high heat. Once shimmering, add chicken breasts. Cook undisturbed for 5-6 minutes until golden brown and releases easily from the pan. Flip and cook the other side for another 4-5 minutes.
  4. Lower heat to medium-low. Place sliced mozzarella evenly on top of each chicken breast, scatter halved cherry tomatoes around the pan. Cover loosely with a lid and let cheese melt for 3-4 minutes.
  5. Remove skillet from heat. Sprinkle torn fresh basil leaves over chicken and tomatoes. Drizzle sweet balsamic glaze generously on top. Add a pinch of red pepper flakes if desired.
  6. Transfer chicken to plates, spoon extra tomatoes and glaze over each serving. Serve warm.

Notes

Patting chicken dry helps get a better sear. Avoid moving chicken too much to develop a golden crust. Watch balsamic glaze carefully to prevent burning. Cover pan when melting mozzarella to trap steam and melt cheese evenly. For thicker chicken breasts, pound slightly for even cooking. Remove tomatoes before adding mozzarella if they release too much water to avoid soggy cheese. Leftovers keep well refrigerated for up to 3 days and reheat best in skillet or oven to maintain texture.
