  • 8 ounces (227 g) cream cheese, softened
  • ½ cup (113 g) unsalted butter, softened
  • 2 cups (240 g) powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 12 tablespoons heavy cream or whole milk (optional)
  • 1 pint fresh strawberries, hulled and sliced
  • 1 pint fresh blueberries
  • ½ pint fresh raspberries (optional)
  • Star-shaped cookie cutter, small size (about 1-1.5 inches)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or silicone mat.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 3 minutes.
  4. Beat in the egg and vanilla extract until combined.
  5. Gradually add dry ingredients to the wet mixture, mixing on low until just combined. Avoid overmixing.
  6. Lightly flour surface and roll dough into a 12-inch diameter circle about ¼ inch thick. Chill dough for 15 minutes if sticky.
  7. Use star cookie cutter to cut stars from dough scraps. Arrange stars and large cookie base on baking sheet.
  8. Bake for 12-15 minutes until edges are lightly golden. Watch stars closely to prevent burning.
  9. Cool cookies completely on a wire rack before frosting.
  10. Beat cream cheese and softened butter until smooth. Gradually add powdered sugar and vanilla. Add heavy cream or milk if needed for spreadable consistency.
  11. Spread cream cheese frosting evenly over the giant sugar cookie base.
  12. Arrange sliced strawberries in stripes and blueberries in star shapes on the frosting. Decorate the blue star section with baked star-shaped cookies. Add raspberries if desired.
  13. Refrigerate assembled fruit pizza for at least 30 minutes before serving to set frosting and meld flavors.

Chill dough if sticky before rolling to prevent sticking. Use room temperature butter and cream cheese for smooth frosting. Tent cookie with foil if edges brown too quickly.
