Instructions

  1. Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, toss the peeled and deveined shrimp with 2 tablespoons olive oil, minced garlic, smoked paprika, red pepper flakes (if using), salt, pepper, and lemon zest. Set aside to marinate briefly.
  3. In a separate large bowl, combine zucchini slices, chopped red bell pepper, cherry tomatoes, and sliced red onion. Drizzle with 1 tablespoon olive oil and season lightly with salt and pepper. Toss to coat.
  4. Spread the veggies evenly on one half of the baking sheet and place the shrimp in a single layer on the other half.
  5. Roast in the oven for 8 to 10 minutes until shrimp turn pink and opaque but are not rubbery.
