Easy Zesty Buffalo Party Bowl Recipe with Soft-Boiled Eggs and Tahini-Citrus Dressing

  • 1 ½ cups cooked quinoa or brown rice (about 270g cooked)
  • 2 cups shredded cooked chicken breast (about 300g)
  • 4 cups chopped romaine lettuce
  • 1 cup thinly sliced celery sticks
  • 4 large eggs (room temperature)
  • ½ cup hot sauce (about 120ml) – Frank’s RedHot recommended
  • 4 tbsp unsalted butter (57g), melted
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ cup natural tahini (60g)
  • 3 tbsp fresh lemon juice
  • 2 tbsp orange juice
  • 1 tbsp honey or maple syrup
  • 24 tbsp water (to thin dressing)
  • Salt to taste
  • Optional toppings:
  • 2 tbsp chopped scallions
  • ¼ cup crumbled blue cheese or feta
  • 1 tbsp toasted sesame seeds

Instructions

  1. Rinse ¾ cup (about 140g) dry quinoa or brown rice under cold water. In a medium saucepan, combine with 1 ½ cups (360ml) water and a pinch of salt. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 15 minutes (quinoa) or 40-45 minutes (brown rice) until water is absorbed and grains are tender. Fluff with a fork and set aside to cool slightly.
  2. In a small bowl, whisk together ½ cup (120ml) hot sauce, 4 tbsp (57g) melted butter, 1 tsp garlic powder, and ½ tsp smoked paprika. Set aside.
  3. In another bowl, combine ¼ cup (60g) tahini, 3 tbsp fresh lemon juice, 2 tbsp orange juice, and 1 tbsp honey or maple syrup. Whisk well, adding 2 to 4 tbsp water gradually until smooth and pourable. Season with salt to taste.
  4. Bring a medium pot of water to a gentle boil. Carefully lower 4 large eggs into the water using a slotted spoon. Boil for exactly 6 minutes for soft yolk with just-set white. Immediately transfer eggs to an ice bath for 5 minutes to stop cooking. Peel gently and slice in half.
  5. In a large serving bowl or individual bowls, layer the cooked quinoa or rice, shredded chicken, chopped romaine, and celery slices. Drizzle the buffalo sauce evenly over the chicken and veggies, tossing lightly to coat. Arrange the soft-boiled egg halves on top.
  6. Spoon the tahini-citrus dressing over the entire bowl. Garnish with chopped scallions, crumbled blue cheese or feta, and toasted sesame seeds if using.
  7. Serve immediately for best flavor and texture.

Notes

Use room temperature eggs for even cooking and easier peeling. Adjust hot sauce quantity to control spice level. Melt butter gently to avoid breaking buffalo sauce. Toss buffalo sauce with chicken and veggies just before serving to keep lettuce crisp. Store dressing separately to prevent sogginess. Leftovers keep well refrigerated for up to 2 days.
