A quick and easy slow cooker shrimp recipe featuring a tangy lemon garlic flavor with a sweet maple Dijon glaze. Perfect for busy weeknights and family gatherings.

Ingredients

Scale
  • 1.5 pounds large shrimp, peeled and deveined (fresh or frozen, thawed)
  • 4 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/4 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: red pepper flakes

Instructions

  1. If frozen, thaw shrimp completely and pat dry with paper towels to remove excess moisture (about 10 minutes).
  2. In a mixing bowl, whisk together minced garlic, lemon zest, lemon juice, maple syrup, Dijon mustard, softened butter, smoked paprika (if using), salt, and black pepper until smooth and glossy.
  3. Pour the glaze into the slow cooker insert, spreading it evenly across the bottom.
  4. Place the shrimp in a single layer over the glaze. Avoid overcrowding; cook in batches if necessary.
  5. Cover and cook on low for 1.5 to 2 hours until shrimp turn pink and opaque and glaze thickens slightly. Check doneness at 1.5 hours by piercing a shrimp with a fork.
  6. Once cooked, gently stir to coat shrimp evenly with the glaze. Adjust salt or pepper if needed.
  7. Sprinkle chopped fresh parsley and optional red pepper flakes over the top before serving.

Notes

Do not lift the slow cooker lid frequently during cooking to maintain glaze thickness. Pat shrimp dry before cooking to avoid watery glaze. If glaze thickens too much, add a splash of water. Can substitute butter with dairy-free spread or olive oil for dairy-free diet. Optional smoked paprika adds smoky depth. Check shrimp doneness at 1.5 hours to avoid overcooking.
