  • 1 pound (450g) large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Juice and zest of 1 lemon
  • 2 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon smoked paprika (optional)
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 400Β°F (200Β°C). Line your sheet pan with parchment paper or lightly grease it to prevent sticking.
  2. In a mixing bowl, whisk together olive oil, minced garlic, lemon juice and zest, maple syrup, Dijon mustard, smoked paprika (if using), salt, and pepper until smooth and glossy.
  3. Add the peeled and deveined shrimp to the bowl and toss to coat thoroughly with the glaze.
  4. Arrange shrimp in a single layer on the prepared sheet pan.
  5. Roast the shrimp in the oven for 8-10 minutes, flipping halfway through (around 4-5 minutes) for even browning.
  6. Check for doneness; shrimp should be pink, opaque, and curl into a loose ‘C’ shape.
  7. Garnish with chopped fresh parsley and serve immediately with your favorite sides.

Notes

Do not overcook shrimp to avoid rubbery texture. Use room temperature shrimp for even cooking. Reserve a tablespoon of marinade before adding shrimp to drizzle over after roasting if desired. Can substitute coconut oil for olive oil and honey for maple syrup. Add red pepper flakes for spice. Suitable for gluten-free diets.
