  • 3/4 cup (180ml) warm water
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 tablespoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Freshly ground black pepper, to taste
  • Optional fresh herbs (parsley or chives), chopped, for garnish

Instructions

  1. In a mixing bowl, combine 2 cups (250g) all-purpose flour, 1 teaspoon salt, 1 tablespoon smoked paprika, 1/2 teaspoon garlic powder, and freshly ground black pepper to taste. Stir dry ingredients until evenly mixed.
  2. Make a well in the center and pour in 3/4 cup (180ml) warm water and 2 tablespoons olive oil. Slowly bring the flour into the water using a fork or fingers until dough starts to come together, about 3 to 5 minutes.
  3. Transfer dough to a lightly floured surface and knead by hand for 8-10 minutes until smooth and elastic. If sticky, sprinkle a little more flour but keep dough slightly tacky.
  4. Cover dough with a clean kitchen towel or plastic wrap and let rest for 20 minutes at room temperature.
  5. Divide dough into two portions. Roll each portion out on a floured surface into a thin rectangle about 1/8 inch (3mm) thick.
  6. Using a sharp knife or pizza cutter, slice dough into even strips about 1/4 inch (6mm) wide.
  7. Bring a large pot of salted water to a rolling boil. Drop noodles gently into water and cook for 3-4 minutes until tender but still firm (al dente).
  8. Drain noodles in a colander. Toss immediately with a little olive oil to prevent sticking. Sprinkle extra smoked paprika or fresh herbs if desired and serve warm.

Notes

Letting the dough rest is essential for tender noodles. Keep dough slightly tacky but not wet. Use warm water to activate flour. Roll dough thinly for best texture. Cook noodles 3-4 minutes to avoid mushiness. Dust knife with flour when cutting to prevent sticking. Dough can be refrigerated for up to 24 hours before rolling. Noodles can be frozen after cutting.
