Decadent White Chocolate Peppermint Cheesecake

  • 1 1/2 cups graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1/2 tsp peppermint extract
  • 3 large eggs, room temperature
  • 1/2 cup heavy cream
  • 8 oz white chocolate, melted and slightly cooled
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1/4 cup crushed candy canes

Instructions

  1. Preheat oven to 325Β°F (163Β°C). Combine graham cracker crumbs, melted butter, and sugar in a mixing bowl. Press mixture into the bottom of a springform pan and bake for 8-10 minutes. Let cool completely.
  2. Beat softened cream cheese in a large bowl until smooth. Add sugar and mix until fully incorporated. Mix in vanilla extract and peppermint extract.
  3. Add eggs one at a time, beating on low speed until combined. Avoid overmixing.
  4. Fold in melted and cooled white chocolate, followed by heavy cream.
  5. Pour filling over cooled crust and smooth the top. Wrap the springform pan in aluminum foil and place in a water bath.
  6. Bake for 50-60 minutes until edges are set but center is slightly jiggly. Turn off oven and let cheesecake cool inside for 1 hour.
  7. Refrigerate cheesecake for at least 4 hours or overnight.
  8. Whip heavy cream and powdered sugar until stiff peaks form. Spread or pipe whipped cream over cheesecake and garnish with crushed candy canes.
  9. Remove springform pan and slice cheesecake into servings.
