Decadent Chocolate-Covered Strawberry Tower

A stunning and elegant dessert featuring fresh strawberries dipped in rich bittersweet chocolate, stacked into a beautiful tower perfect for entertaining or special occasions.

  • 2 pounds fresh strawberries, medium to large size, washed and dried thoroughly
  • 8 ounces bittersweet chocolate, chopped or chips
  • 2 ounces white chocolate, for drizzling (optional)
  • 2 tablespoons heavy cream
  • A pinch of sea salt
  • Toothpicks or skewers, for dipping
  • Parchment paper, for setting dipped strawberries
  • ½ cup almonds or crushed pistachios (optional)

Instructions

  1. Gently wash the strawberries and pat them completely dry with paper towels. Leave the green tops on for presentation.
  2. Set up a double boiler by filling a saucepan with about 2 inches of water and bringing it to a gentle simmer. Place a heatproof bowl on top without touching the water. Add bittersweet chocolate and heavy cream. Stir frequently until smooth and glossy, about 5-7 minutes. Alternatively, melt in microwave in 30-second bursts, stirring in between.
  3. Insert a toothpick into the stem end of each strawberry. Dip each berry into the melted chocolate, swirling to coat evenly. Let excess drip off, then place on parchment-lined baking sheet. If desired, sprinkle nuts immediately after dipping while chocolate is still wet.
  4. Melt white chocolate similarly and drizzle thin streams over dipped strawberries for contrast (optional).
  5. Place the baking sheet in the refrigerator for about 20 minutes until chocolate is firm.
  6. Arrange a base layer of strawberries on a serving plate or cake stand. Stack additional layers carefully, slightly overlapping each berry to create a pyramid. Use toothpicks to secure layers if needed.
  7. Lightly sprinkle a pinch of sea salt over the top of the tower.

Notes

Ensure strawberries are completely dry to prevent chocolate from seizing. Rewarm chocolate gently if it thickens during dipping. Chill strawberries in fridge to set chocolate but avoid leaving too long to prevent condensation. Use good quality chocolate for best results. For vegan version, substitute dairy-free chocolate and coconut cream.
