  • 1 ½ cups graham cracker crumbs (about 10 full sheets)
  • ⅓ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 ounces (450g) cream cheese, softened
  • ⅔ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 6 ounces (170g) semi-sweet chocolate chips or chopped chocolate
  • 1 tablespoon coconut oil or unsalted butter

Instructions

  1. Preheat your oven to 325°F (163°C). Line your 8×8-inch pan with parchment paper, leaving some overhang on the sides.
  2. In a medium bowl, combine graham cracker crumbs, melted unsalted butter, and sugar. Stir until the mixture looks like wet sand and holds together when pressed.
  3. Press the crust mixture evenly into the bottom of the prepared pan. Bake for 10 minutes, then remove and set aside to cool slightly.
  4. In a large bowl, beat softened cream cheese with sugar until smooth and creamy (about 2-3 minutes).
  5. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  6. Gently fold in chopped fresh strawberries using a rubber spatula.
  7. Pour the filling over the baked crust and spread evenly. Smooth the top with the spatula.
  8. Bake for 35-40 minutes until edges are set but center has a slight jiggle.
  9. Remove from oven and let cool completely on a wire rack (about 1 hour). Refrigerate for at least 3 hours or overnight to fully set.
  10. Melt semi-sweet chocolate and coconut oil together in a microwave-safe bowl or over a double boiler until smooth.
  11. Pour the melted chocolate over the chilled cheesecake bars, spreading evenly. Refrigerate for 30 minutes to let the chocolate harden.
  12. Use the parchment paper overhang to lift the bars out of the pan. Cut into 12 equal squares with a sharp knife warmed under hot water and dried before slicing.

Notes

Softened cream cheese is key to avoid lumps. Do not overmix after adding eggs to prevent cracking. Use fresh strawberries for best texture; if using frozen, thaw and drain well. Chill bars thoroughly before adding chocolate coating to prevent cracking. Warm knife before slicing chocolate for clean cuts.
