  • 1 can of salmon (about 14 oz), skinless and boneless
  • ½ cup breadcrumbs (regular or Panko)
  • 1 large egg
  • ¼ cup finely chopped onion
  • ¼ cup finely chopped bell pepper (green or red)
  • 2 tablespoons chopped parsley
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Dash of hot sauce
  • ½ cup vegetable oil

Instructions

  1. In a large mixing bowl, combine 1 can of salmon, ½ cup breadcrumbs, and 1 large egg. Flake the salmon gently with a fork.
  2. Add ¼ cup finely chopped onion, ¼ cup finely chopped bell pepper, and 2 tablespoons chopped parsley. Mix until evenly combined.
  3. Season the mixture with ½ teaspoon salt, ¼ teaspoon black pepper, and a dash of hot sauce. Adjust to taste.
  4. Shape the mixture into small patties, about 2 inches in diameter. You should get 8-10 patties.
  5. Heat ½ cup vegetable oil in a skillet over medium heat until hot but not smoking.
  6. Carefully place the patties into the skillet. Fry for 3-4 minutes per side or until golden brown and crispy.
  7. Remove the croquettes and place them on a plate lined with paper towels to drain excess oil.
  8. Serve immediately while hot and crispy, with your favorite dipping sauce or a squeeze of lemon.

Notes

If the mixture is too dry, add a tablespoon of mayonnaise or Greek yogurt. If it’s too wet, sprinkle in a little extra breadcrumbs until it holds together. Don’t overcrowd the skillet when frying, and test the oil temperature with a breadcrumb before cooking.
