  • 2 tablespoons olive oil, plus extra for skillet
  • 23 tablespoons water, as needed for batter consistency

  • Freshly cracked black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Peel 4-5 garlic cloves, place on a small baking sheet, drizzle with olive oil, and roast for 15-20 minutes until soft and golden. Remove and mash with a fork.
  2. In a medium mixing bowl, combine drained cottage cheese, all-purpose flour, baking powder, and salt. Add mashed roasted garlic, 2 tablespoons olive oil, and 2 tablespoons water. Mix well with a whisk or fork. Add more water 1 teaspoon at a time if batter is too thick, until spreadable but holds shape.
  3. Heat a 10-inch cast iron or non-stick skillet over medium heat. Add a drizzle of olive oil and warm until shimmering but not smoking.
  4. Pour batter into the hot skillet, spreading evenly to about ¼-inch thickness. Cook for 5-7 minutes until edges turn golden and bottom is crisp.
  5. Carefully flip the flatbread using a wide spatula and cook the other side for 4-5 minutes until golden and cooked through.
  6. Remove from skillet and place on a wire rack or cutting board. Sprinkle with freshly cracked black pepper and optional fresh herbs. Slice into wedges and serve warm with a drizzle of olive oil or favorite dipping sauce.
