  • 1 bunch fresh asparagus, washed and trimmed

  • 1/4 cup grated Parmesan cheese (optional)
  • 1/2 cup sour cream or Greek yogurt (or dairy-free coconut yogurt)
  • 1 chipotle pepper in adobo sauce, minced
  • 1 tbsp fresh lime juice
  • 1 garlic clove, minced
  • Salt, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Trim woody ends off asparagus and place on a parchment-lined baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat. Roast for 8-10 minutes until tender but crisp. Let cool completely.
  2. Lightly flour work surface and roll out thawed puff pastry sheet to smooth creases. Cut into 24 equal 2-inch squares. Place squares on parchment-lined baking sheet.
  3. Lay one roasted asparagus spear on each pastry square. Sprinkle with Parmesan if using. Fold corners of each square up slightly to create a rustic parcel, but do not seal completely.
  4. Brush edges and tops of pastry squares with beaten egg wash for a golden finish.
  5. Cover baking sheet with plastic wrap and refrigerate overnight or at least 8 hours to let pastry puff and flavors meld.
  6. Preheat oven to 425°F (220°C). Remove plastic wrap and bake bites for 15-18 minutes until puffed and golden brown, checking after 12 minutes to avoid burning.
  7. While baking, mix sour cream, minced chipotle pepper, lime juice, garlic, and salt in a small bowl. Adjust seasoning to taste.
  8. Let bites cool 5 minutes before serving. Drizzle or dollop chipotle lime crema over each bite and enjoy.

Notes

Chilling the assembled bites overnight is key for puffier pastry and better flavor melding. Use a pastry brush for even egg wash application. Watch baking time closely to avoid burning. For less heat, substitute chipotle pepper with smoked paprika or omit.
