  • 1 cup (120g) all-purpose flour
  • 1/4 cup (35g) cornstarch
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • Buttermilk (or non-dairy milk with a splash of vinegar)
  • Vegetable oil (for frying)

Instructions

  1. Peel and slice the onions into thin rings (about 1/8-inch thick). Separate the rings gently.
  2. Place the onion rings in a mixing bowl and pour buttermilk over them until fully submerged. Let them soak for 10-15 minutes.
  3. In another bowl, combine all-purpose flour, cornstarch, salt, garlic powder, paprika, and black pepper. Mix well.
  4. Pour vegetable oil into a pan (about 2 inches deep) and heat over medium-high heat until it reaches 350°F (175°C).
  5. Take a handful of soaked onion rings and toss them in the flour mixture until fully coated. Shake off excess flour.
  6. Carefully drop the coated onions into the hot oil, making sure not to overcrowd the pan. Fry for 2-3 minutes, or until golden brown and crispy.
  7. Remove the onions with a slotted spoon and place them on paper towels to drain. Sprinkle with a little extra salt while they’re still warm.
  8. Continue frying the remaining onion rings in batches until all are crispy and golden.
