Crispy Gluten-Free Chickpeas Recipe with Easy Maple Dijon Glaze

A quick and easy gluten-free snack featuring crispy roasted chickpeas coated in a sweet and tangy maple Dijon glaze. Perfect for snacking, potlucks, or as a crunchy salad topper.

  • 2 cans (15 oz / 425 g each) chickpeas, drained and rinsed thoroughly
  • 2 tablespoons (30 ml) olive oil, extra virgin preferred
  • 2 tablespoons (30 ml) pure maple syrup
  • 1 tablespoon (15 g) Dijon mustard
  • 1 teaspoon (2 g) smoked paprika
  • ½ teaspoon (1 g) garlic powder
  • ½ teaspoon (3 g) sea salt, or to taste
  • ¼ teaspoon (1 g) freshly ground black pepper
  • Optional: pinch of cayenne pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Drain and rinse 2 cans of chickpeas under cold water. Spread them out on a clean kitchen towel or paper towels and pat dry thoroughly (about 5 minutes).
  3. Transfer dried chickpeas to a large mixing bowl. Add 2 tablespoons olive oil, 1 teaspoon smoked paprika, ½ teaspoon garlic powder, ½ teaspoon sea salt, and ¼ teaspoon freshly ground black pepper. Mix well to coat evenly.
  4. Spread chickpeas in a single layer on the prepared baking sheet, ensuring they have space to roast evenly.
  5. Roast for 20 minutes, shaking or stirring halfway through for even browning.
  6. While roasting, whisk together 2 tablespoons pure maple syrup and 1 tablespoon Dijon mustard in a small bowl until smooth.
  7. Remove chickpeas from the oven and toss gently with the maple Dijon glaze to coat each chickpea.
  8. Return chickpeas to the baking sheet and roast for an additional 10 minutes to caramelize the glaze.
  9. Let the chickpeas cool on the baking sheet for 5 minutes to crisp up further. Adjust salt or spices if needed before serving.

Notes

Dry chickpeas thoroughly before roasting to ensure crispiness. Avoid overcrowding the pan to prevent steaming. Toss chickpeas gently with glaze to avoid breaking. Watch closely during the last 5 minutes to prevent burning the glaze. Leftovers can be refreshed in a 350°F oven for 5 minutes.
