A quick and easy roasted asparagus side dish featuring crispy garlic and melted Parmesan for a perfectly tender and flavorful vegetable.

  • 1 pound fresh asparagus spears, trimmed (about 1-inch woody ends removed)
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced finely
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse and pat dry the asparagus spears. Snap or trim off about 1 inch from the woody ends.
  3. In a large mixing bowl, combine olive oil, minced garlic, salt, pepper, and optional red pepper flakes and lemon zest. Stir well to blend.
  4. Add the asparagus spears to the bowl and toss thoroughly until evenly coated.
  5. Spread the asparagus in a single layer on a baking sheet with some space between each spear.
  6. Roast for 12–15 minutes, checking around the 8-minute mark to gently shake the pan or flip the spears for even roasting.
  7. Sprinkle grated Parmesan evenly over the asparagus and return to the oven for another 2–3 minutes until the cheese melts and turns slightly golden.
  8. Serve immediately while hot and crispy.

Notes

Dry asparagus well before roasting to ensure crispiness. Avoid overcrowding the pan to prevent steaming. Add Parmesan cheese near the end to avoid burning. If garlic browns too quickly, reduce oven temperature slightly or toss asparagus earlier.
