  • ½ cup granulated sugar
  • 1 tsp ground cinnamon
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, melted
  • 2 tbsp whole milk
  • 1 tsp vanilla extract
  • 16 oz cream cheese, softened
  • ⅔ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 2 tbsp sour cream or Greek yogurt
  • ¼ cup granulated sugar
  • 1 tbsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch pan or line it with parchment paper.
  2. In a medium bowl, whisk together flour, ½ cup sugar, 1 tsp cinnamon, baking powder, and salt. Pour in melted butter, milk, and vanilla extract. Stir until crumbly dough forms.
  3. Press two-thirds of the crust mixture firmly into the bottom of the prepared pan.
  4. Bake the crust for 12-15 minutes until golden at the edges.
  5. While crust bakes, beat softened cream cheese with ⅔ cup sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla extract and sour cream or Greek yogurt.
  6. Remove crust from oven. Pour cheesecake filling evenly over warm crust. Crumble remaining crust mixture over the top.
  7. Bake assembled bars for 35-40 minutes until cheesecake is set but slightly jiggly in center.
  8. Mix ¼ cup sugar and 1 tbsp cinnamon in a small bowl. After bars cool about 10 minutes, sprinkle cinnamon sugar topping generously over bars.
  9. Let bars cool completely on wire rack, then chill in fridge at least 3 hours.
  10. Cut into 12 bars and serve. For clean cuts, warm knife under hot water and wipe dry between slices.

Pre-baking the crust is essential for a crispy base. Use room temperature cream cheese and eggs for smooth filling. Warm knife between cuts for clean slices. Chill bars for at least 3 hours before serving for best texture.
