Instructions

  1. Prepare the chicken: Slice each chicken breast horizontally to create thinner fillets. Place them between two sheets of plastic wrap and pound to an even thickness (about 1/2 inch).
  2. Set up the breading station: Place flour in one shallow bowl, beaten eggs in another, and a mixture of panko breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper in a third.
  3. Dredge the chicken: Dip each piece of chicken into the flour, shaking off excess. Coat it in the beaten eggs, then the breadcrumb mixture, pressing gently to ensure the coating sticks evenly.
  4. Fry the chicken: Heat olive oil in a large skillet over medium-high heat. Fry the coated chicken pieces for 3-4 minutes per side until golden brown. Transfer to a paper towel-lined plate to drain excess oil.
