  • 3/4 cup (90g) all-purpose flour
  • 3/4 cup (180ml) water (or unsweetened plant-based milk)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 cup (120ml) hot sauce (Frank’s RedHot recommended)
  • 2 tbsp (30g) unsalted butter, melted (or vegan butter)
  • 1/2 cup (120g) crumbled blue cheese
  • 1/4 cup (60g) sour cream or Greek yogurt
  • 2 tbsp (30g) mayonnaise
  • 1 tsp lemon juice
  • 1 tbsp fresh chives or parsley, chopped (optional)

Instructions

  1. Preheat your oven to 450°F (230°C) and line a rimmed 9×13-inch baking sheet with parchment paper or a silicone mat.
  2. In a mixing bowl, whisk together flour, garlic powder, paprika, salt, and water until smooth and thick enough to coat the cauliflower evenly.
  3. Dip each cauliflower floret into the batter, letting excess drip off, then place on the prepared baking sheet without overcrowding.
  4. Bake for 20 minutes, flipping the florets halfway through to ensure even crisping.
  5. While baking, melt butter in a small saucepan or microwave and stir in hot sauce until smooth.
  6. Transfer baked florets to a large bowl, pour buffalo sauce over, and toss gently to coat.
  7. Return coated florets to the baking sheet and bake for another 10 minutes to set the sauce and crisp the bites.
  8. Prepare the blue cheese dip by mixing crumbled blue cheese, sour cream or Greek yogurt, mayonnaise, and lemon juice until creamy but still chunky. Garnish with chopped chives or parsley if desired.
  9. Serve the crispy buffalo cauliflower bites immediately with the blue cheese dip on the side.
