Crispy Blackstone Smash Burgers Recipe with Sweet Caramelized Onions

A quick and easy recipe for crispy smashed burgers cooked on a Blackstone griddle, topped with sweet caramelized onions. Perfect for casual cookouts or last-minute dinners.

  • 1 pound (450 g) ground beef (80/20 blend), preferably freshly ground
  • Kosher salt and pepper, to season
  • 2 medium yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 teaspoon brown sugar
  • 4 burger buns (potato or brioche recommended)
  • Cheese slices (American or sharp cheddar, optional)
  • Pickles (optional)
  • Lettuce (optional)
  • Tomato (optional)
  • Mustard (optional)
  • Ketchup (optional)

Instructions

  1. Thinly slice 2 medium yellow onions.
  2. Heat 2 tablespoons of unsalted butter in a skillet over medium-low heat.
  3. Add onions and 1 teaspoon brown sugar. Cook slowly, stirring occasionally, for about 25-30 minutes until golden and sweet. Keep the heat low to avoid burning. If onions start sticking, splash a bit of water to loosen them.
  4. Divide 1 pound of ground beef into 4 equal balls (~4 oz / 113 g each). Lightly season each with kosher salt and pepper on all sides.
  5. Preheat your Blackstone griddle over medium-high heat until very hot, about 5 minutes.
  6. Place each beef ball on the griddle. Using a sturdy spatula, press down firmly to about ½-inch thickness. Hold the pressure for 10 seconds to set the crust.
  7. Let the patty cook undisturbed for 2-3 minutes until the edges turn crispy and brown.
  8. Flip the patties carefully, then top each with a slice of cheese if using. Cook another 1-2 minutes until cheese melts and the burger is cooked through.
  9. While burgers finish, place buns cut-side down on the griddle for 30 seconds or until lightly toasted.
  10. Assemble the burgers by layering the bottom bun with caramelized onions, then the burger patty, and your choice of pickles, lettuce, tomato, and condiments. Top with the other half of the bun.

Notes

Do not press the patties again after flipping to avoid drying out the burger. Use 80/20 ground beef for juiciness. Slow-caramelize onions on low heat for best flavor. Toast buns on the griddle to prevent sogginess. If onions stick, add a splash of water to loosen.
