Crispy Bacon-Wrapped Asparagus Pea Salad

A quick and easy side dish featuring tender asparagus wrapped in crispy bacon, paired with a fresh roasted garlic pea salad. Perfect for potlucks, family gatherings, or a light, flavorful side.

  • 1 bunch asparagus (about 1 lb / 450 g), trimmed
  • 8 slices thin-cut bacon
  • 1 cup frozen peas (150 g), thawed
  • 1 whole bulb roasted garlic
  • 2 tbsp extra virgin olive oil
  • 1 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley or chives (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. Prepare the roasted garlic: Slice the top off the garlic bulb to expose the cloves. Drizzle with a bit of olive oil, wrap in foil, and roast for about 30-35 minutes until soft and golden. Let cool.
  3. Trim the asparagus by snapping or cutting off the woody ends (about 1-2 inches).
  4. Wrap each asparagus spear tightly with one slice of bacon from bottom to tip. Lay them seam-side down on the baking sheet.
  5. Roast the bacon-wrapped asparagus for 20-25 minutes, flipping halfway through, until bacon is crispy and asparagus is tender but still bright green.
  6. While asparagus roasts, place thawed peas in a small bowl. Add lemon juice, 1 tbsp olive oil, salt, and pepper. Toss gently to coat.
  7. Once garlic is cool, squeeze the soft roasted garlic cloves out of their skins and mash into the pea mixture. Stir well.
  8. Arrange the roasted bacon-wrapped asparagus on a platter and spoon the roasted garlic pea salad alongside or gently toss together.
  9. Sprinkle chopped parsley or chives over the salad for color and brightness.
  10. Serve immediately, warm or at room temperature.

Notes

Use thin-cut bacon for best crispiness. If short on time, precook bacon slices until just starting to crisp before wrapping asparagus. Avoid crowding the pan to keep bacon crispy. Serve soon after assembling to prevent bacon from softening. Frozen asparagus can be used but roast shorter to avoid mushiness.
