Ingredients

Scale
  • 23 medium zucchinis, washed and cut into fry-sized sticks
  • 1/2 cup (60g) all-purpose flour (gluten-free option: almond flour)
  • 2 large eggs, beaten, room temperature
  • 1 cup (100g) panko breadcrumbs (Japanese-style recommended)
  • 1/4 cup (25g) grated Parmesan cheese
  • 2 tbsp Cajun seasoning (store-bought or homemade)
  • 1 tsp garlic powder
  • Salt to taste
  • 1/2 tsp black pepper
  • Olive oil spray or avocado oil spray

Instructions

  1. Wash 2-3 medium zucchinis and cut into sticks about 3 inches long and 1/2 inch thick. Pat dry with paper towels to remove excess moisture.
  2. Set up breading station: place 1/2 cup flour in one bowl, whisk 2 eggs in another, and combine 1 cup panko, 1/4 cup Parmesan, 2 tbsp Cajun seasoning, 1 tsp garlic powder, 1/2 tsp black pepper, and salt to taste in a third bowl.
  3. Dredge each zucchini stick in flour, shaking off excess. Dip into beaten eggs, allowing excess to drip off. Press into breadcrumb mixture to coat evenly. Place coated fries on a baking sheet or plate.
  4. Preheat air fryer to 400°F (200°C) for about 3 minutes.
  5. Arrange zucchini fries in a single layer in the air fryer basket without touching. Lightly spray with olive or avocado oil. Cook in batches if necessary.
  6. Air fry at 400°F (200°C) for 10-12 minutes, flipping halfway through, until golden brown and crispy. Add 1-2 more minutes if needed, watching closely to avoid burning.
  7. Serve immediately with your favorite dipping sauce.

Notes

Do not overcrowd the air fryer basket to ensure crispiness. Pat zucchini dry to remove excess moisture. Flip fries halfway through cooking for even browning. Use oil spray sparingly to avoid greasiness. For gluten-free, substitute flour and panko with almond flour and gluten-free breadcrumbs. For dairy-free, omit Parmesan or use plant-based cheese.
