  • 1 cup corned beef, finely chopped or shredded
  • 3/4 cup sauerkraut, drained and patted dry
  • 3/4 cup shredded Swiss cheese
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon sweet pickle relish
  • 1 teaspoon apple cider vinegar or pickle juice
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Prepare the filling by mixing finely chopped corned beef, drained sauerkraut, and shredded Swiss cheese in a medium bowl. Ensure sauerkraut is dry to avoid soggy egg rolls.
  2. Lay one egg roll wrapper on a clean surface in a diamond shape. Place about 2 tablespoons of filling near the corner closest to you.
  3. Fold the corner over the filling, then fold in both side corners snugly. Roll tightly toward the remaining corner and moisten the final edge with water to seal. Repeat for all wrappers.
  4. Lightly brush each egg roll with melted butter on all sides.
  5. Preheat the air fryer to 375°F (190°C) for about 3 minutes.
  6. Place egg rolls in a single layer in the air fryer basket without touching. Cook for 5–6 minutes, flip carefully, then cook another 5–6 minutes until golden brown and crispy.
  7. While egg rolls cook, whisk together mayonnaise, ketchup, sweet pickle relish, apple cider vinegar, smoked paprika, salt, and pepper to make the Thousand Island dip.
  8. Let egg rolls cool for a minute or two before serving with the creamy Thousand Island dip.

Notes

Drain sauerkraut well to prevent soggy wrappers. Do not overfill egg rolls to avoid bursting. Brush with melted butter for best crispiness. Flip egg rolls halfway through cooking for even browning. If no air fryer, bake at 400°F (200°C) on a wire rack for 15–20 minutes, flipping halfway. Leftovers can be refrigerated for up to 2 days and reheated in the air fryer at 350°F (175°C) for 3–5 minutes. Avoid microwaving to keep crispiness.
