  • 1 cup finely grated Parmesan cheese (about 90 grams)
  • 1 cup panko breadcrumbs (about 100 grams)
  • 2 large eggs, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a shallow bowl, mix together the panko breadcrumbs, grated Parmesan, salt, pepper, and garlic powder if using.
  3. Beat the eggs in a separate bowl until smooth.
  4. Dip each chicken tender first into the beaten eggs, letting any excess drip off, then dredge it in the breadcrumb-Parmesan mixture. Press lightly to ensure the coating adheres well. Place the coated tenders on the prepared baking sheet or on a wire rack set over the baking sheet.
  5. Bake for 15-18 minutes, flipping halfway through, until the tenders are golden brown and reach an internal temperature of 165°F (74°C).
  6. Let the tenders rest for 3-5 minutes before serving to help the crust set and keep the juices inside.
